Carrot cake - Take 2!

 






My second attempt at this carrot cake recipe. This time the icing turned out fine - I think it was because I left it in the fridge for longer than last time. This meant the icing didn't run off the sides, and I think this cake looked better than the previous attempt because the icing set.

Viennese Whirls



Again, to go in food basket for Christmas. These are Viennese whirls, and although the shortbread biscuit dough was very hard to pipe, I think they looked nice. The biscuit was light and fluffy and the buttercream was creamy. Altogether, the Viennese whirls were very nice.

Cheese Straws



For Christmas I decided to make a food basket for my mum and dad. I made these cheese straws to go in the basket as part of present. Although they took quite a while in the oven, I thought they tasted good and hopefully, mum and dad will think so too!

Chocolate chip cookies





Chocolate chip cookies I made for my friend as part of her Secret Santa present; she said she loved them! I thought they were really nice, so I made another batch for my friends when they came round the other day.

Carrot Cake




This is my carrot cake I made; my favourite type of cake!! This has 2 layers and cream cheese both in the middle and on top of the cake. The icing was too runny so there was also icing all down the sides were it ran down, oops. I really enjoyed this cake, and I thought it tasted really good!

Food Tech coursework practicals

For my food tech coursework I had to complete my own investigation. I chose to base mine on diabetic cupcakes for different occasions. These are the cupcakes I made:

These are red velvet cupcakes decorated to have a Valentine's Day theme.
These are banana and apple cupcakes decorated to suit a birthday occasion.

These are vanilla cupcakes decorated to look like a bride and groom, in order to have a wedding theme.
These are custard cupcakes which I baked in ice cream cones and decorated with diabetic decorations, to suit a party occasion.
These are fruit cupcakes decorated with gingerbread men to have a Christmassy theme.

These are chocolate cupcakes I decorated to suit a Halloween theme. I decorated them with shortbread biscuits made to look my tombstones, and candied orange peel to look like fallen leaves.

Diabetic shortbread

 
 

These are diabetic shortbread biscuits I got off of the sugar free recipes website. These were really nice; I will definitely be making them again!

Lemon iced buns


This was my attempt at creating iced buns. I know they don't exactly look like they are supposed to, but it was my first attempt. This was made using Paul Hollywood's lemon iced buns recipe, but I just replaced the lemon zest and juice with orange zest and juice.

Dark chocolate and cherry cookies


 After my food tech cooking I had some dark chocolate left over. I found glace cherries in the cupboard and I made...dark chocolate and cherry cookies. I found the recipe online. These cookies were really nice, soft, chewy, and everyone enjoyed them!

Diabetic raspberry turnovers



I have been wanting to make these turnovers ever since I found the recipe. These are diabetic because of my dad, I even made my own diabetic jam to go inside. These were lovely, but a bit too big!

Mini chocolate doughnuts

 



I made these to take round my friends house for Halloween, they all loved them! They were made with my new doughnut mould from Lakeland, and the recipe was also taken from Lakeland. I then dipped then in melted chocolate and sprinkled them with chocolate sprinkles, I will definitely be making them again!

Strawberry and chocolate brownies



These are strawberry and chocolate brownies, with milk and white chocolate melted on top. I had strawberries and chocolate left over from cooking in food tech, so I found this recipe online. These tasted really good!

Sweetie shop cupcakes

These are lemon curd cupcakes which my mum wanted for her to take into work - I used the same recipe for the cake and icing as I did for the first cupcakes on this blog. I decorated these with various different sweets.

Mum's birthday cake!

I made this cake for my mum's recent birthday and it tasted lovely! The cake is a peach and raspberry cake topped with white chocolate ganache. I made the chocolate bowls myself by melting chocolate and dipping balloons into the chocolate, and then cooling them in the fridge. Once they had hardened, I placed orange slices, grapes and raspberries into them and arranged them on top of the cake.
